Piesang Brood


"Complete South African Cookbook":

500ml (2cups) flour
250ml (1cup) sugar
120g (8TBS) butter/margarine

2 eggs
3 large, ripe bananas, peels and mashed
65ml water
7ml (1.5tsp) baking powder
5ml (1tsp) bicarbonate of soda
pinch of salt

1. Cream the butter or margarine and sugar in a bowl until light and creamy in texture.

2. Stir in the mashed bananas and beat to combine thoroughly.

3. Beat in the eggs, one at a time, blending well.

4. Sift the flour and salt into the mixture and stir to blend well.

5. Dissolve the bicarbonate of soda in the water and stir into the mixture, then stir in the baking powder.

6. Pour the batter into a greased loaf tin and bake in the oven at 180'C (350'f) until done, about 45-55minutes.

7. Let it cool in the tin for a few min, then turn out onto a wire rack to cool completely.
