Chipotle Chicken Tostadas

2 lbs. Chicken Breasts
1 Large Onion
1 Tbs. Olive Oil
1 Can Diced Tomatoes
1 Chipotle Chili
1 Tbs. Adobo Sauce (purchase a can of chipotle chili’s in adobo sauce, but only use 1, you can add more if you like the flavor to be stronger and spicier)
Salt and Pepper to taste
Corn Tostada Shells (a flat taco shell)
Sour Cream

Rub chicken breasts with salt and pepper. Boil chicken until cooked (about 15 minutes). While chicken is boiling thinly slice the onion, and cook it in the oil until tender. Blend the diced tomatoes and Chipotle Chili in the blender until smooth and add to onions. Cut and shred the chicken breasts. Add the shredded chicken to the tomato and onion mixture. Cook the entire mixture until the sauce has reduced so it’s not too runny.
To make tostadas, spread the tostada shell with sour cream and top with chicken mixture.
Serve with Spanish rice and black beans, or with a side salad, and chips and salsa.
