Ingredients
100g butter
100g castor sugar
100g self raising flour
2 eggs
zest of 1 lemon (lemon essence does nicely too)
4tblspoons lemon curd
Method
beat everything(except for the lemon curd) together in a food processor .
into 4 tea cups(microwavable ones) add a spoon full of lemon curd in each.
add a quarter of the mixture on top .
cover with cling film and microwave individually for 1-1 1/2 mins till risen and cooked
serve in cup and pour custard over
