Cake Mix Cookies



1 cake mix (I used triple chocolate for the cookies in the photo)
1/2 cup oil
1/4 flour
2 eggs

Lightly whisk eggs and oil in a bowl.
Mix in flour and cake mix until well blended.
Roll into 2-inch balls and bake at 350ยบ for 10-12 minutes on an ungreased cookie sheet. For really soft cookies, omit flour.

** Ros' notes:  These are DELICIOUS!  Definitely don't grease the cookie sheet.  They are quite puffy with air and very soft when they're done.  Allow to cool properly - they harden up nicely. Also, Amy's suggestion was to use a 2" ice-cream scoop for uniformity... definitely take her advice, and make sure you space these out nicely.


My version is flawed for the following reasons:
1)  I didn't space the cookies out enough on the tray so they attached and lost their shape
2)  The chocolate icing tub didn't survive the night and white was all that I had on hand when it was finally light enough to take pics.

However, these things aside this was Ooey-gooey delicious.  We will definitely make them again.
